Rice horchata is just rice, almonds, suger and spices, soaked overnight, blended and strained. No cooking.
It is delicious!
But how safe is it? Because nothing is cooked. When I was a child, prior to cooking rice we would scatter the rice on the table and pick out all the little stones and the discolored grains. Then we would wash the rice several times and only then it was ready to cook. In modern store-bought rice I have never seen stones in the past decades, but still in my mind rice is kind of 'unhygienic' straight out of the bag.
